Regarding Egypt, I'm probably the wrong person to ask, since I only know the basics, myself! But since you asked, I would be extremely distrustful of all sources written after AD 250 or so, since the Christians were hostile and moderns (esoteric and academic alike) are ignorant. Your best bet will be getting as close to the original myths as possible. My favorite online source is The Internet Sacred Text Archive, and they have a great Egypt section. I've read parts of E. A. Wallis Budge's Legends of the Gods and found it to be a really useful starting point, but be advised I haven't read the whole thing!
Regarding Persephone, have you read the Homeric Hymn to Demeter? That was the primary source concerning her, even in ancient times! With respect to Isis and Osiris, you can safely assume Isis is Demeter and Osiris is Persephone, and you won't go far astray—the myths really are very close. I'll make an extra point of looking carefully at the Demeter myth as I continue on future sections...
