Yes, quite so! It has a very distinctive, pleasant, perfume-y sort of smell to it, which carries over to the wine.

I think you have a different species out west: the USDA's Atlas of United States Trees only reports Sambucus Canadensis as far west as Texas. It indicates five other species, all of which can be found in California, though! I'm afraid I have no way to guess which is yours. (Looks like at least one of them is toxic. Be careful!)


I've not spent time in the eastern part of the US and I wonder what your assessment is of the plants there.

Oh dear, I don't really know. I've lived my entire life in the Northeast and never been elsewhere except very briefly for business. I suppose I can say that I find maple trees comforting and palm trees distressing, but beyond that I don't have much basis for comparison!


Now ginger wine... hmmm, that sounds yummy!

It's very good! It's so warming, very much a winter wine. The recipe I use can, naturally, be found in Wright's book.
